Ingredients
  • 1 1/2 lbs fresh broccoli
  • 1 pint half and half
  • 2 cups water
  • 1 lbs processed cheese (Velveeta)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup cornstarch, mixed with 1 cup water

Instructions
  1. Steam broccoli until tender.
  2. Place half and half and water into the top of a double broiler; add cheese, salt and pepper. Heat until cheese melts. Add steamed broccoli.
  3. Mix cornstarch and water in a small bowl, stir into cheese mixture and heat over simmering water until soup thickens.
